21 Day Fix - Week 1 Results

The results are in! There were 5 of us in my challenge group, and together we lost almost 50 lbs! Two challengers each lost 18 and 14 lbs! Those are pretty incredible results, I can’t wait to see how we all do in these next two weeks.

It’s not often I crave fast food. Greasy burgers and french fries really only appeal to me when I’m, well… inebriated. But there is one fast food chain that I stare at longingly each time I drive by… Chipotle. Maybe you don’t consider them a fast food chain because they don’t serve Happy Meals or have a drive thru (which they SHOULD, by the way), but since they can throw together a burrito and send you on your way in under 5 minutes I think they qualify. My favorite is the Chicken Fajita Burrito Bowl, loaded up with every topping they have. I’ve been fighting the urge to sneak off and devour one of these when no one’s looking ever since I started the Fix, so I decided to make a Fix-approved version for lunch today… and tomorrow. Let’s be real, one just isn’t enough. I loaded my bowl up with leftover Southwest seasoned chicken from last night, cilantro brown rice, sauteed peppers and onions also from last night, cheese, plain Greek yogurt, and salsa. If only I had black beans and guacamole, life would be complete. I’m not complaining though, because this was AMAZING.

Dinner was quick, easy and delicious. If you’ve never noodle-ized (it’s not really a word, but indulge me) zucchini you are seriously missing out. This Shrimp Scampi recipe was so easy and fast yet tasted five-star fancy. Once I upgrade from food processor to mandolin, I’ll be making these healthy noodles every chance I get.

  2. Love your website! It’s so simple even I feel as though I may actually be able to accomplish the 21 Day Fix! Just wondering though, has anyone else been unable to view “Day 7” of your journal? I’m able to view all days except day 7 for some reason. Would you please let me know what your meal plan was for that day? Thank you so much!


  3. Hi Nicole, I season the chicken with the 21DF’s Southwest Seasoning, and the recipe for that can be found in your Eating Plan booklet. This seasoning is amazing and I use it on just about everything! For the rice, I just use brown rice mixed with a little chopped cilantro.
