So simple and so filling. I always season my ground turkey with Worcestershire, onion powder, salt and pepper, and the broccoli was seasoned with just salt and pepper before I roasted it. Throw a little hot sauce on there and it’s a perfect meal!

Dinner

I’ve mentioned before how much we love Buffalo chicken, and I’m famous (according to my husband at least) for my homemade Buffalo chicken pizza. I make a homemade crust, top it with Ranch dressing, pulled Buffalo chicken, red onion, cheese, jalapenos, and tomatoes. I don’t mean to toot my own horn but it really is amazing. So how can I recreate this deliciousness while sticking to the 21 Day Fix? Enter cauliflower pizza crust and Greek yogurt Ranch dressing. The cauliflower crust is so good and you really can pick it up like a regular slice of pizza. I made mine without cheese, with tons of Italian Seasoning and garlic powder, and I halved this recipe to make a small personal-sized pizza for myself.
21 Day Fix - Cauliflower Pizza Crust

I was feeling a bit lazy, so instead of baking some chicken I just sliced up a few florets of cauliflower, roasted them, and tossed the in some Frank’s. I was afraid that since the Ranch is made of yogurt it wouldn’t bake well, so I didn’t spread it on the “dough” and put the toppings on top like I do with actual Ranch dressing. Instead, I spread on some Frank’s, layer the cheese and veggies (I didn’t have jalapenos this time unfortunately), baked it, and then drizzled the Ranch on top.

  3. This tasted really good! I forgot to buy hot sauce, so I switched my plan and used a little ground beef, sautéed onions and mushrooms, and some lowfat shredded cheddar, then spooned some Greek yogurt ranch on it when it came out of the oven.
    Yum-my! Now like every recipe states about cauliflower crust, no, it doesn’t replace a regular crust or even something like a pita crust. But as a low carb vehicle to shovel toppings and ranch in my mouth, it was fantastic. lol
    I bet this crust would be nice with some diced ham or turkey sausage, bell pepper and onion, and some cheese–make a nice “Denver” type breakfast pizza. With some melon or berries on the side, it’d be great. 😀

  4. When I clicked on the link for the cauliflower crust, the recipe that it takes me to seems quite large. Is it still just the 2 green, 1/2 red? Thanks so much!

  5. Great question Carrie. For this particular meal I didn’t follow the recipe to a “T”. I just used a head of cauliflower, which wound up being about 2 cups (2 green), and then the 1/2 red is for the egg. Most of the time when I make the crust I completely omit the cheese that’s called for in the recipe, but sometimes I use a little Parmesan. 🙂

  6. I’ve made a few cauliflower pizza crusts before and this was by far the best! The first recipe I tried had a lot of parm in the crust and I felt like it just added so much fat, sodium, and calories that it defeated the purpose…little goat cheese (which I am slightly obsessed with) in this and it was perfect. Crispest I’ve ever been able to get it. I thought for sure I could trick my husband with it when he came home but he took one bite and said eew that’s that cauliflower crap and threw it out…you can’t please them all – just means more for me 😜
