21 Day Fix - Ground Turkey Pasta Bake
Pasta (2 yellow), Ground Turkey (1 red), Greek Yogurt (1/2 red), Cheese (1/2 blue)

You wouldn’t normally associate a heaping pile of cheesy pasta goodness with good nutrition, but trust me, if you do it right, it totally is! I took seasoned ground turkey, pasta, and all natural pasta sauce and mixed it in a bowl. Then I took half of that mixture and spread it into a baking dish. On top of that I spread Greek yogurt (low fat ricotta is great too), and then layered the rest of the pasta mixture on top of that. Sprinkle some cheese and seasoning on top, bake til hot and bubbly, and now you’ve got yourself a healthy comfort food that’s Fix-approved.

Dinner

21 Day Fix - General Tso's Chicken
Chicken (1 red), Broccoli (2 greens)

General Tso’s Chicken is usually breaded, fried, and then tossed is a sauce loaded with less than nutritious ingredients. Thankfully I was able to satisfy my Chinese food cravings tonight with a healthy baked version. The sauce is so flavorful and the baked chicken is so perfectly crisp on the outside and tender on the inside, that you’ll be throwing out your takeout menus.

    Question here though, is your version of General Tso’s chicken really ok on 21 day fix? I just started it, and the brown sugar and the sugar in the chili sauce has me wondering.

  2. Hi Ulanda,thanks for your comment! Technically, sugar is not Fix-approved, but a great substitute for brown sugar is 100% pure maple syrup. This is allowed on the Fix in small quantities, so you can definitely substitute the syrup in the recipe and make it totally Fix friendly! As for the chili sauce, the ingredients in the kind I use are just chili, garlic, salt, and vinegar, so that’s OK too. The only other thing I would be careful about is the soy sauce… too much sodium isn’t good so make sure you’re using the low sodium kind. If you have any other questions let me know!

  3. For the Pasta, Do you cook just one serving??? or do you cook and entire baking dish? how do you adjust the servings?

  5. Christine, for this particular meal I just made a plate for just myself, but you can easily double or triple the recipe to fill a casserole!

  7. Hi Taren, I don’t actually have a recipe for the pasta, it was something I kind of threw together, but I can tell you roughly what I did. I browned one red container full of ground turkey and seasoned it with garlic powder, onion powder, salt and pepper. I added one purple container of pasta sauce to the meat and cooked that few a few minutes. Then I took 2 yellow containers full of pasta and mixed that in as well. In a baking dish, I took half of that mixture and covered the bottom of the dish, then spread 1/2 red container of plain nonfat Greek yogurt over it. I layered the rest of the pasta mixture on top and then topped it with 1/2 blue container of mozzarella cheese. I baked it at 350 for about 20 minutes, when the cheese got melty. Hope that helps!

  8. Hi Eileen, great question. Typically 1 banana equals 2 purples, but the bananas I had that week were small and filled 1 purple when I sliced them.
