Clean Eating Peanut Butter Cups

I don’t think there’s really much for me to say other than GO MAKE THESE IMMEDIATELY. TheGraciousPantry.com is one of my favorite resources for clean recipes, and she’s taken my adoration to a whole new level with this one. So incredibly simple and unbelievably good, you’re not going to believe they’re actually healthy.

Clean Eating Peanut Butter Cups
INGREDIENTS

  • ¾ cup virgin coconut oil
  • ½ cup unsweetened cocoa powder
  • ½ cup honey
  • 2 teaspoons vanilla extract
  • 1 jar clean peanut butter, smooth works best

DIRECTIONS

  1. In a medium pot, combine all ingredients except the peanut butter.
  2. Whisk thoroughly over low to medium heat until the chocolate is smooth.
  3. Using either an oiled silicone mini muffin pan (regular size works too) OR foil cupcake papers in a regular muffin pan, fill the wells 1/3 of the way up with chocolate. Keep the chocolate warmed over low heat if possible or on the warm setting in your slow cooker.
  4. Freeze these for 15 minutes.
  5. Remove them from freezer and add another ⅓ using peanut butter.
  6. Freeze for 15 minutes.
  7. Remove them from freezer and add the last ⅓ with more chocolate.
  8. Freeze for at least 2 hours.
  9. Store in freezer. These get melty pretty quickly, so if you want to serve them but don’t want them frozen, put them in the fridge for about 20 minutes, then serve.

Note: These are very good straight out of the freezer.

  1. Hi Randi, that’s a great question. As written, theses pb cups are definitely clean, but not the best treat for the 21 Day Fix. To make them more Fix-friendly, I’d suggest the following changes:
    1/4 cup coconut oil
    1 1/2 scoops chocolate Shakeology
    1/4 cup honey
    2 tsp vanilla
    Make the chocolate mixture according to the directions, but it this will produce half the amount. When assembling the cups, scoop a small amount of chocolate into the cupcake liner, just enough to fill the bottom. When doing the peanut butter layer, use 2 tsp per cupcake liner. Top each with the remaining chocolate. The cups won’t be as big as the original recipe, but just and tasty!
    This will make each cup count as 4 tsp. Hope this helps!
