Sorry guys, I was so hungry I completely forgot to take a picture of those containers dumped out all over my plate. Rest assured it looked as good as it tasted. You really can’t go wrong with roasted zucchini, squash and red pepper seasoned with Italian seasoning, tossed with spinach and onion chicken sausage, quinoa, and a sprinkling of Balsamic vinegar on top.
Hummus Crusted Chicken (1 blue, 1 red), Caramelized Brussels Sprouts and Onions (1 green)
I might be the only person in the world that salivates at the words “brussels sprouts”. Seriously. I love them pan-roasted with caramelized onions and a little salt. Even my six year old sat down at the table and said “Oh yea, brussels sprouts!”. They’re that good. And this chicken? I’m probably going to make this chicken every week, it’s that amazing. And so easy. Because that’s what the Fix is all about: healthy, simple, and delicious.
