I kept is sweet and simple today by just adding 1 purple container full of fresh strawberries to my Vanilla Shakeology.

Ground Turkey Tacos with Fresh Guacamole Salsa and Greek Yogurt (1 1/2 red, 1 green, 1/2 blue, 1 yellow)

The leftover ground turkey from yesterday got spiced up (literally) with some hot salsa and repurposed as delicious crunchy tacos. I topped them with a fresh avocado salsa made from tomatoes, avocado, jalapenos, red onion, lime juice, and garlic salt. The whole thing took minutes to make and even less time to enjoy.

Dinner

21 Day Fix - Baked Boneless Buffalo Chicken and Brussels Sprouts

Buffalo Chicken (1 1/2 red, 1/2 yellow), Brussels Sprouts (1 green)

Thank goodness our long-time favorite boneless buffalo wings are 21 Day Fix approved! I made some brussels sprouts and a nice spinach salad with Balsamic to go with it. Next time I’ll have to make some Greek Yogurt Ranch Dressing for dipping. I saved one of my yellow containers for a glass a wine I can’t wait to enjoy on the couch later, since it is happy hour after all!

  1. I thought a half of a banana equaled 1 purple. Where did you find flour is a yellow? I looked in the book and didn’t see it.

  2. Hi Kim, For the brussels spouts, I got a bag of steamable frozen brussels sprouts and microwaved them til they were almost done. Then I sliced them in half, tossed them in a bit of oil, and seasoned them with salt and pepper. I roasted them on a baking sheet at 400 for about 20 minutes, flipping them over halfway through. I caramelized some onions by chopping them into small pieces and sauteing them over medium heat in a few tsp of oil for about 10 minutes, until them become a caramel color. I like to sprinkle the onions with a little salt, then toss the brussels sprouts and onions together and serve. I didn’t add bacon, but I’ll bet that would be really tasty!

  3. How did you cook your brussel sprouts? It looks like bacon and onion are in there as well – looks yummy can you tell me the recipe. Thanks

  4. What kind of boneless chicken chunks did you use? Or did you cut up chicken and use part bread crumbs and Parmesan cheese??
