Love stir fries? Me too. One of my favorites is General Tso’s Chicken with roasted broccoli, and another is Orange Chicken Style Stir Fry, both of which I usually pair with some jasmine rice. But sometimes, I decide to change things up a bit by using… you guessed it… cauliflower! Tonight, try making this cauliflower rice with your stir fry and save yourself some calories while sneaking in another serving of veggies.
- 1 head of cauliflower, chopped into florets
- salt, to taste
- cooking spray
Add the cauliflower to a food processor and pulse until it resembles a “rice” consistency. Heat a large pan and spray with cooking spray, and add cauliflower to it. Cook until slightly browned, and season with salt. Serve immediately.
