Just about every week, I roast a huge batch of vegetables and use them in different yet similarly glorious ways. You should do this too, because it’s amazing, easy, and convenient.

Just spray some baking sheets with cooking spray, cut up the veggies and spray them with cooking spray, too. Season them however you wish (I love the 21 Day Fix’s Mediterranean Seasoning) and cook at 400 for 10-15 minutes per side.

I also love to caramelize some onions to throw in there for sweetness. I do this using water in lieu of oil. Spray a pan with cooking spray and turn heat to medium. Add some chopped onions, and when you hear it start to sizzle, add a tbsp or two of water. Let it cook until the water dissolves and it starts to sizzle again. Repeat this process until the onions turn a caramel color.

Mix the onions with the roasted veggies and there you have it, a nice big batch of veggies ready and waiting. Toss them with pasta, eat them as a side, or layer them on top of a bed of cauliflower “rice” with some mozzarella.
