30 Minute Meals: Baked Dijon Salmon with Roasted Asparagus

Before the Fix I had never attempted my own salad dressings, but it’s so delicious and easy I’ll never go back to the store-bought bottles. The Dijon Vinaigrette is especially amazing, and is so versatile it tastes fantastic on much more than just salad. Try it on salmon for a quick and flavorful meal.

Baked Dijon Salmon with Roasted Asparagus

Salmon Dijon
Container count per serving: 1 red, 1 orange, 1 green, ¼ blue
For the salmon:

  • 2 4oz salmon fillets
  • 4 tbsp of the 21 Day Fix’s Dijon Dressing

For the asparagus:

  • 20 asparagus spears
  • olive oil or cooking spray
  • garlic powder
  • salt
  • pepper
  • 2 tbsp Parmesan cheese
  • 1 tbsp lemon juice

To make the salmon:
Preheat the oven to 400 degrees. Spray a baking dish with cooking spray and place salmon skin-side down in the dish. Top with the Dijon dressing and bake for 12-15 minutes.

To make the asparagus:
Cut the bottoms of the spears off and arrange in a single layer on a baking sheet. Coat with olive oil or cooking spray and season with salt, pepper, garlic powder and Parmesan cheese. Bake for 12 – 15 minutes. Drizzle with lemon juice when finished cooking and serve alongside salmon.
