The Meals: Countdown to Competition Eating Plan
egg whites + steel cut oats (1 red + 1 yellow)
Shakeology + coconut oil (1 red + 1 tsp)
balsamic baked tofu + broccoli + coconut oil (1 red + 1 green + 1 tsp)
This balsamic tofu proves that tofu can be delicious. Baking it in the oven makes it crisp on the outside and the Balsamic gave it a great flavor.

This spicy tofu is a definite favorite and is going in our rotation!

Buffalo chicken meatballs was one of my favorite meals during the 21DFX, so it was fitting that it was my last meal. The past 21 days were challenging, and the Countdown to Competition Eating Plan was pretty intense. I’m glad I did it though, because I lost 4 lbs and I see more definition in my arms, stomach, and hips. This is a fantastic program, and I definitely recommend it to anyone who wants to become stronger and more toned. I’m going to dive right in to round 2, this time sticking to just the 21DFX Eating Plan. It’s advised that you only do the Countdown to Competition Eating Plan occasionally, and once you’re finished, slow reintroduce things like carbs and dairy into your diet. I plan to limit my dairy considerably… I’ve learned these past few weeks that dairy doesn’t agree with my body well and I’m much happier without it. Carbs I’m actually looking forward to, but I will try and use some self-control for the next week or so and not overdo it. I look forward to pushing onward in my fitness journey, learning more about healthy eating and becoming stronger along the way.
