21 Day Fix? Nailed it! After 21 days I reached my goal of losing 5 lbs, plus I lost 2″ off my waist, so I’m thrilled with the results. That doesn’t mean I’m stopping here though. I plan to do another round but more than that I plan to use what I’ve learned about clean eating and portion control for the rest of my life. That’s what is so great about the Fix… it’s not diet you use for a brief amount of time to loose a lot of weight. It’s how we should be eating every day, regardless of our weight loss goals. It’s healthy and balanced, and I for one never want to go back to the way I used to eat.

I had a serious craving for pizza and since I already thoroughly enjoyed a cheat meal last night, I knew I had to be good. Thank goodness for cauliflower pizza crust! This time I topped it with roasted vegetables and some amazing Buffalo chicken sausage. The perfect meal to end this round of the Fix… now on to round 2!

We have an overabundance of tomatoes from our garden, and I just had to find the perfect way to use them. We had some gigantic Beefsteaks that were just right for stuffing with a delicious mixture of herbs, cheese and garlic thanks to this Stuffed Beefsteak Tomatoes recipe. I also had a nice eggplant in the fridge so I threw together some Ratatouille, and together it was the perfect light, summery lunch!

This is what we call a “cheat meal”. It is in no way approved by the 21 Day Fix, and I’m certain that if Autumn Calabrese were to see me eating it she’d have a heart attack. We went out to an amazing gourmet hot dog restaurant to celebrate a friend’s birthday and I knew before I walked through the doors that I was going to fall off the wagon. Hard. And guess what? It was delicious and I don’t regret a single bite. You have to treat yourself occasionally and after 20 days of following the Fix to the letter, I felt this treat was well deserved. And guess what else? I didn’t gain a single pound.

I kept is sweet and simple today by just adding 1 purple container full of fresh strawberries to my Vanilla Shakeology.

The leftover ground turkey from yesterday got spiced up (literally) with some hot salsa and repurposed as delicious crunchy tacos. I topped them with a fresh avocado salsa made from tomatoes, avocado, jalapenos, red onion, lime juice, and garlic salt. The whole thing took minutes to make and even less time to enjoy.

Thank goodness our long-time favorite boneless buffalo wings are 21 Day Fix approved! I made some brussels sprouts and a nice spinach salad with Balsamic to go with it. Next time I’ll have to make some Greek Yogurt Ranch Dressing for dipping. I saved one of my yellow containers for a glass a wine I can’t wait to enjoy on the couch later, since it is happy hour after all!

Today I used some fresh cherries, lemon juice and almond extract to my strawberry Shakeology and it was summery and delicious! I love how it keeps me full til lunch and tastes like such a treat.

I’m loving my lunch time rice bowls. They keep me so full and I find myself not even needed a second snack most of the time. Today I used some fresh zucchini and tomatoes from our garden and seasoned them with Italian seasoning and a little salt before roasting them. If you’ve never roasted a tomato, you are seriously missing out. I seasoned the ground turkey with my favorite blend of onion powder, salt, garlic powder, and Worcestershire and caramelized some onions (using only cooking spray and water) for added sweetness.

Tonight was the first night I ate a restaurant during the Fix, and we went to one of our favorite local spots called The Wildflower Cafe. They serve all local veggies and farm-raised meats, and the menu is always changing to take advantage of the fresh produce available. I enjoyed the special, which was trout with wild rice and pan-seared green beans. It was amazing! I had saved one of my yellow containers for wine and I’m so glad I did. They featured a White Peach Sangria that was just amazing. I was so proud of myself for sticking to my meal plan and not caving when they told us the dessert specials!

I just had to make that Zesty Sriracha Shrimp and Quinoa for lunch again since it was such a nice treat last week! I like to use half the soy sauce and twice the Sriracha.

21 Day Fix - Stuffed Peppers and Sweet Baked Broccoli
Green Pepper (1 green), Ground Turkey (1 red), Cheese (1 blue), Baked Broccoli (1 green)

Stuffed peppers are a favorite around here, and already super healthy so they’re perfect for the Fix. Ground turkey is seasoned with onion powder, salt, Worcestershire, and garlic powder then mixed with diced tomatoes, bell pepper, a little marinara sauce and cheese. I like to top the meat mixture with a little more cheese after stuffing it in the pepper and baking it til the cheese is melted. Pair that with some Sweet Baked Broccoli, this time made without oil and only a drizzling of agave nectar to make it Fix-friendly, you’ll leave the dinner table satisfied.
